Peach Bread Pudding

Ok you’re going to thank me for this! Not only is this delicious, it was also put to the taste test by co-workers who were willing to sacrifice themselves.

Peach season is almost done and I’m so sad! This season’s peaches have been so amazing and not to mention HUGE! I’ve been in peachy-keen heaven this summer! So sad. BUT!! I will enjoy while I can and make decadent bread pudding while I can!

The best bread I’ve found to make bread pudding (and French Toast) is Trader Joe’s sliced Brioche. It’s slightly sweet, light, and I could eat it right out of the bag. It’s amazing. Trader Joe’s does it once again!

 

This bread pudding is pretty easy to make and the biggest challenge is waiting for it to stop baking so you can eat it!

What is it about the smell of vanilla and cinnamon that makes life happier? It reminds me of home, snuggly blankets, and fuzzy slippers. The best times ever.

What inspired this beautiful piece of art?? My love of this summer’s peaches and the need to make bread pudding. I had a random craving for bread pudding and it needed to be in my life with a scoop of vanilla ice cream. So I made that dream come alive! And now I get to share it with the world. Again. Peach Bread Pudding

Yields:  8 – 10 servings

Time: 45-50 minutes

Ingredients:

  • 2 large peaches, de-seeded and sliced
  • 1 loaf Trader Joe’s Brioche bread, cut into cubes
  • 2 cups heavy cream
  • 1 cup half & half
  • ⅓ cup of sugar
  • 2 eggs, beaten
  • Pinch of salt
  • 1 teaspoon of vanilla extract
  • 3 tablespoons of cinnamon

Instructions:

Preheat oven to 350℉ and grease an 9×13 inches baking dish with non-stick spray or butter.

Whisk together eggs, heavy cream, sugar, vanilla, 1 tablesppon of cinnamon, and salt. Place cubed bread and peaches in the baking dish and toss gently. Pour egg mixture over the bread and peaches then gently press down to make sure that everything gets soaked. Sprinkle with remaining cinnamon and bake for 35-40 minutes in the oven.

Remove from the oven when the top is golden brown. Serve warm with a scoop of vanilla ice cream.
